Goat is a small ruminant and herbivore that feed most on plants and produces meat that is highly nutritious and naturally superior to other meats. Comparison of goat meat to other commercially available and exotic meats showed that goat meat has lower cholesterol, saturated fat and total fat content when compared to the other meats. The concentrations of riboflavin, potassium, manganese, and copper in goat meat were higher than those in the other meats. Goat meat is another food source with superior nutritional composition that can provide potential health benefits for healthy and medically managed consumers.
Goat producers need to know the facts about the product they produce and what consumers think because this industry will have to compete with the other animal-food producing industries as it continues to grow. Goat meat is the most consumed meat worldwide but not one of the more traditional meats consumed by Americans. Some producers even though they produce this highly nutritious meat, have not consumed goat meat or other goat products. Nowadays, our population is getting more diverse and consumers are more concerned about their health which has resulted in increased demand for more nutritious and healthful alternative meat source. Goat meat is a natural desirable red meat alternative and producers need to maximize on producing high quality products\

CHEVONDAIRE® Chevondaire® is the registered trade mark of gourmet goat milk products manufactured by Goat First Network from Ultra- Pasteurized Vitamin D goat milk. This trade mark was developed to introduce to and provide consumers with milk products that are nutritionally balanced and superior to other milk products. Goat milk is a natural choice for individuals who are sensitive to cow milk and/or soy products. It has a delicious, creamy taste and is easily digested. Also, goat milk is high in calcium and low in sodium, fat and cholesterol. The milk used for these products are from goats not treated with growth hormones. Goat milk has several other usages and consumers not introduced to goat milk and/or products should realize that goat cheese can be used in various in recipes, examples alfredo sauce and macaroni and cheese. Goat milk can be used for different flavors of goat cheese (plain, pineapple, garlic and chives, dill and onions), and fudges (vanilla, chocolate). Consumers should be aware that goat milk can be used to make products like yogurt, buttermilk, custards, cheese cakes and bake products. Goat milk can be used as a substitute for cow’s milk when milk is needed in a recipe. Goat milk is easily digested and can be used as replacement for milk when required by all animal species because of the nutritional content.
The evaluation serves as an opportunity to measure the preferences of the consumers participating in the evaluation, to educate the public about the various value-added products that can be derived from goat milk and to introduce consumers to alternative food choices that may be chosen to be included in their daily diets.
